Ingredients

    1 Whole wheat English muffin
    1 large egg
    1 tbsp nonfat milk
    1 slice deli turkey breast (like Foster Farms)
    1/2 slice mozzarella cheese

Directions

Crack the egg into a small, microwave safe bowl like a dessert bowl or a 12 oz ramekin, mix in milk and microwave for 30-45 seconds until firm but not dry.

Split english muffin, scoop cooked egg onto the bottom of the muffin, place turkey slice on top (folding if necesary) top with cheese and microwave 30 seconds until cheese melts.

Place other half of muffin on top, take a bite and you're on your way.

    This was fast, easy and delicious. My teenager was excited to find something so easy that he could make it himself. I scrambled my egg and added a bit of spinach. Fabulous! - 5/30/09

    this was quick and easy. I loved it. I had to modify it a little. Used whole milk (1/2 tbsp) and kraft american cheese (1 slice). Brought it to 282cals. - 11/20/08

    was only one up this morning so decided to try a recipie from spark thiswas a tasty morning meal easy to do i also aded a bit of sautee spinach to mine to get the extra veggie in thanks - 11/9/08
