Number of Servings: 4

Ingredients

    2 cups cooked roast chicken, diced
    1 cup rice
    1 cup onion, diced
    2 cups chickpeas (canned)
    1/2 cup frozen peas
    1 cup chicken stock
    1 cup water
    1 tsp coriander
    1 tsp chili powder
    1 tsp tumeric
    1 tbsp canola oil

Directions

Heat oil in pan and saute the onion until golden. Add the chicken and rice and cook for a further 2 minutes. Add the spices and contine to cook, stirring constantly for 1 minute. Add the peas, stock and water and turn the pan down to low, cooking for 15-20 minutes or until all liquid has been absorbed. Take off the heat and set to one side for 3 minutes.

Serve with cucumber salad and pita bread.

Serves 4

you can substitute the chicken and chickpeas with other leftover cooked meat or beans eg. lentils.
