Introduction

This is a lactose-free variation on my grandmother's homemade French toast recipe, using soymilk instead of cow's milk. This is a lactose-free variation on my grandmother's homemade French toast recipe, using soymilk instead of cow's milk.

Ingredients

    5 large fresh eggs
    1/3 cup Silk Plain Soymilk
    1 tbsp ground cinnamon
    1/2 tbsp ground nutmeg
    8 slices wheat bread

Directions

Mix eggs and soymilk in a flat pan. Mix cinnamon and nutmeg and divide into two small bowls or large spoons. Sprinkle one portion of cinnamon/nutmeg mixture onto egg/soymilk mixture. Dip each slice of bread into raw mixture and coats both sides thoroughly. Cook on hot non-stick griddle or pan 2-3 minutes or until golden brown. Flip and cook other side. Serve hot.

Makes 4 2-slice servings.
