Introduction

Number of Servings: 6

Ingredients

    2 tbs. olive oil
    4 carrots, peeled and diced
    2 leeks, (few inches of green left on), washed and sliced
    2 zucchini, diced
    1 large onion, chopped
    3 tsp minced garlic
    1 tsp dried thyme or 1 tbs fresh
    1 cup dried lentils
    1/2 pearl barley, rinsed
    6 cups non-fat chicken broth
    2 cups diced tomatoes
    1 cup torn basil leaves, or 1 tbs dry basil

Directions

In a heavy pot, saute carrots, leeks, zucchini, onion, and garlic in olive oil for about 15 min. Add thyme.

Add lentils, barley and stock. Bring to a boil then simmer on low for about half an hour.

Add tomatoes, basil, and salt and pepper to taste. Let simmer for 10 more min.

Allow to cool for about 5 min. before serving.
