Introduction

Definitely not a diet food, but - like all things - good in moderation! Perfect for parties, especially if you add a little food colouring to either the cakes or the frosting for a festive touch.

Ingredients

    For the cupcakes:

    150g butter
    150g caster sugar
    175 self-raising flour
    3 eggs, beaten
    1 tsp vanilla extract

    For the frosting:

    200g butter
    350g icing sugar
    1 tsp vanilla extract
    1 tbsp hot water

Directions

Preheat the oven to 180 C and put paper cups in a muffin pan.

Beat the eggs in a bowl. Cream the sugar and butter in a food processor, then add all the other ingredients and mix till creamy.

Divide the mixture between 12 cups, and bake for approximately 12-15 mins (or until a toothpick comes out clean). Transfer to a wire rack, and allow to cool completely.

To make the frosting, mix the butter, sugar and vanilla extract and then add the hot water. Mix until the perfect consistency is achieved, and smother the cupcakes!
