Introduction

Ingredients

    1 oz tortilla strips/chips
    2 tbsp salsa, spiciness of choice
    1 oz low-fat sausage of your choice
    1 oz low-fat cheddar cheese
    1/4 cup beans, whole or refined
    1/8 cup rice of choice
    1 cherry or grape tomato, w/seeds out
    1/2 jalapeno pepper
    a sprig or two of cilantro

Directions

1) Chop the pepper finely into small pieces.
2) Half cherry tomato and remove seeds. Then chop it finely to small pieces.
3) Shred your cheddar cheese and put to side.
4) Measure your rice and beans and put aside as well.
5) Do the same for the salsa.
5) Briefly cook your sausage piece for 2-3 minutes, then remove from pan and mince finely
6) Arrange nachos in this suggested order in a small Ziploc container, from inside to out:
Beans
Rice
Salsa
Tortillas
7) Sprinkle sausage, cheese, tomatoes, and pepper pieces on top. Add a piece of cilantro for decoration.
8) Microwave on medium heat for up to 1:00 until cheese is melted.
9) Enjoy!
