Introduction

Number of Servings: 9

Ingredients

    1 cup chopped onion ( about 1 large)
    1 cup green pepper chopped (about 1 large)
    2 cup chopped zucchini ( don't skip this even if you think you don't like it, has little taste and adds fiber!)
    2 Large carrots chopped
    2 tablespoons vegetable oil
    1 pound lean ground beef 90% lean or better
    1/2 tsp garlic powder or fresh garlic
    1 tsp chili powder
    1 box Spanish Rice a Roni
    A 16 ounce Pace Picante or Salsa (You decide the heat!)


Directions

Saute all veggies in 1 tbs of the oil until translucent.
Remove to a large bowl.
Brown the ground beef and using a slotted spoon put it on top of the veggies.
Drain and discard any fat.
Fry the Rice a Roni mixture in 1 tbs of veg oil.
When browned, add the spice mixture, the salsa, and two cup of water.
Add the garlic salt and the chili powder. Stir together.
Add the vegetable meat mixture, stir well, bring to a boil, cover and simmer for about 20 to 25 minutes.
This is ready to eat when this is done.

One Serving is 1 cup of the mixture. It is very filling and high in fiber and vegetables!

I serve just as it is or...

Sometimes I serve it in flour tortillos and add a grated chesse on top for a fancy taco. But you need to add these calories on as well if you serve it this way. Bon Appetite!

    I think something's wrong with the calorie calculation on this. I entered them myself, and a serving came out to 296 calories. - 9/13/08

    You are right! I couldn't figure out what was wrong with this so had it recalculate the servings and came out correct. There was a glitch somewhere here. It is fixed now. Please try it and let me know what you think!!! Thanks!!
