Muffins that you can add anything to! I almost always add cinnamon and nutmeg, and sometimes I add chocolate chips, coconut, oats, etc. Of course, alter the nutritional value for anything added to this recipe. Ingredients

    3 ripe bananas
    1/4 cup oil
    1 cup sugar (or sugar substitute)
    1 tsp. baking soda
    1 tsp. salt
    2 cups flour
    1 tsp. cinnamon (optional)
    1 tsp. nutmeg (optional)

Directions

Preheat oven to 360 degrees. Mash bananas. Add oil and sugar. Mix well.

Soft flour, salt, baking soda, cinnamon, and nutmeg in a separate bowl.

Add flour mix to banana mix. Mix until blended. Do not beat.

Add mixture to paper-lined muffin pan.

Muffins are done when a toothpick stuck in comes out clean. Makes 12 muffins.
