Introduction

Ingredients

    1 lb tropical fruit salad
    1/2 c grape tomatores
    8-10 sprgs fresh cilantro
    1 tbs balsamic vineage
    1 1/2lb snapper (tilapia or basa) fillets
    1/2 tsp seasoned pepper blend
    cooking spray

Directions

1. Prepare salsa by cutting fruit into small pieces; cut tomatoes into halves or quarters. Place both in medium bowl. Chop cilantro finely (2 tbs); add to fruit. Sir in balsamic vinegar until blended.
2. Preheat large saute pan on medium-high 2-3 minutes. Season both sides of fish with seasoned pepper. Remove pan from heat and coat with cooking spray. Add fish, with darker side up, to pan; cook 2-3 minutes on each side or until fish is opaque and separates easily with a fork. Serve fish with fruit salad.
