Introduction

Ingredients

    1/2 large Sweet potato peeled & sliced thinly
    1 cup mixed chopped peppers
    1/2 medium onion diced
    100g chopped tomatos (tinned)
    60g Passata (crushed tomatos),
    30g low fat cheese grated
    Basil, 10 leaves
    1 clove garlic chopped finely

Directions

1. Put peppers, onion, tomatos, garlic and 40g of passata in a bowl and mix.
2. Chop 5 leaves of basil and mix into bowl
3. Place 1/3 of the slices of sweet potato in bottom of oven dish, cover with half of mixture.
4. Cover with 1/3 of sliced and put remaining mixture over. Cover with remaining slices.
5. Poor over remaining passata and cover with tin foil
6. Bake in oven for 55 minutes
7. Grate cheese and chop remaining basil
8. Remove from oven and remove tin foil.
9. Sprinkle cheese and basil over and put back in oven uncovered for 5 mins
10. Remove from oven and allow sit for 5 mins and serve
