Introduction

Don't peel the apples. Just core and chop.

This super-easy recipe is great for kids because it is hard to screw up. On different occasions I have used up to 50% more apples than it calls for and left it in the oven 15-20 minutes too long and it comes out fine. Just supervise kids when chopping apples.

Ingredients

    FOR CAKE
    2 cups sugar
    1 cup oil
    3 large eggs
    2 cups flour
    1 tsp. baking soda
    1 tsp. salt
    2 tsp. cinnamon
    2 tsp. vanilla
    4 cups diced apples, cored but not peeled
    1 cup diced walnuts

    FOR ICING
    1 package (8 oz.) cream cheese
    3 tbsp. margarine
    1 tsp. vanilla
    1½ cup powdered sugar
    pinch of salt

Directions

FOR CAKE
1. Preheat oven to 350˚F.
2. Mix sugar, oil, and eggs in a large bowl.
3. Combine flour, soda, salt, and cinnamon and add to sugar mixture. Add vanilla and mix thoroughly.
4. Mix together apples and nuts and add to batter. Stir in by hand; batter is too heavy for most mixers.
5. Bake 50-60 minutes in lightly greased 9” x 13” pan.
6. Cool completely before frosting.

FOR ICING

In a small bowl, beat all ingredients at high speed, scraping dow sides, until smooth. Frost cooled cake. Refrigerate.
