Ingredients

    4 (6-8 oz) boneless center cut pork loin chops
    3/4 tsp kosher salt
    1/2 tsp ground black pepper
    1 Tbsp canola oil
    1 Tbsp butter
    1 Tbsp chopped fresh rosemary
    1 clove garlic, finely chopped

Directions

1. Sprinkle pork with salt and pepper.
2. In a large skillet, heat oil over medium-high heat. Add pork and cook 4 minutes per side. Reduce heat to medium. Add butter, rosemary and garlic. Cook, turning occasionally 2-3 minutes or until no longer pink. Let stand 5 minutes. Spoon dripping over chops.

    spray olive oil into pan and left out the butter and olive oil - deglazing the pan at the end with a bit of lemon water - used juices over chops and brown rice - YUM! - 6/20/07
