Ingredients

    1 cup wheat berries
    1 can chicken broth
    1/4 cup water
    1 can tomatoes, okra, corn mix
    2 cloves garlic, minced
    Chopped onions
    Celery - 1 stalk
    1 tbsp fresh parsley
    4 medium baby carrots, chopped
    1 cup fresh spinach
    1/2 tsp paprika
    1/4 tsp cayenne pepper
    1 tbsp olive oil

Directions

Boil chicken broth and water. Add wheat berries, return to boil. Simmer 45-60 minutes, or until tender. Drain.

While wheat berries are simmering, cook garlic, onions, celery, and carrots in olive oil for about 5 minutes. Add tomato, okra, corn mixture. Bring to boiling. Simmer and add spinach, paprika, cayenne, and parsley.

Combine veggie mixture and wheat berries.

    Very Good
    Made this for my family and we loved it. Making it again today but will substitute 'no salt' canned tomatoes to get the sodium numbers down. Thanks for the recipe! - 2/24/16
