This is filling and delicious as a side to any meal. This is filling and delicious as a side to any meal.

    1 TBSP & 1 TSP - Olive Oil
    1&1/4 lb - Red Potatoes, quartered
    2 TSP - finely chopped green onion
    4 Garlic Cloves, minced
    3/4 TSP - Dried Thyme
    3/4 TSP - Dried Rosemary, crushed
    1/8 TSP - Nutmeg, ground
    2 TBSP & 2 TSP - Balsamic Vinegar
    1/2 TSP - Salt
    1/8 TSP - Pepper


1. In a large nonstick skillet, heat oil over medium-high heat. Add the potatoes, onion and garlic; toss to combine. Add the thyme, rosemary and nutmeg; toss well. Cook and stir for 2-3 minutes or until potatoes are hot.
2. Transfer to a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Bake at 400 degrees F for 25-30 minutes or until potatoes are golden and almost tender. Add the vinegar, salt and pepper; toss well. Bake 5-8 minutes longer or until potatoes are tender.

    We are a family of 4, and everyone gave 2 thumbs up on this one. Will definatly make again! Nice flavor change from the boring roasted potato. Thanks for sharing this one!
