Introduction

Amanda and Mike's homemade healthy and delicious pizza!!! Amanda and Mike's homemade healthy and delicious pizza!!!
Number of Servings: 8

Ingredients

    2 Boneless Skinless Chicken Breast
    3 Tbsp Finely Chopped Red Onion
    1/2 C. Fresh Mushrooms - Sliced
    1/2 Sm. Zucchini - Round Slices Cut In Halves
    Pizza Crust (We use Martha White Pizza Crust
    Mix - 6.5 oz pkg)
    4 Tbsp Sweet Baby Ray's Original Barbeque
    Sauce
    1 C. Shredded Mozzarella Cheese - Part Skim

Directions

Preheat oven to 350 degrees.

Cut Chicken Breast into cubes. Place chicken into baking pan (I usually use just a round cake pan about 1" deep) and place about 1/4 c of water in pan with chicken.. cover tight with foil and bake for 15 mins. Remove foil and use spatula to turn all pieces of chicken over. Cover with foil again and put back in oven for 15 mins.

While chicken is cooking, prepare your pizza crust and press dough in prepared pan. Also prepare your onion and zucchini at this time.

Evenly and sparingly spread your barbeque sauce on the unbaked pizza crust.

Remove chicken from oven once you have baked on both sides for 15 mins each and remove foil.

** TURN OVEN TO 500 Degrees.

You will want to use a slotted spoon when removing chicken from baking pan so that all water/juices can drip off before you place it on pizza. Top your pizza with the remaining ingredients... onion, mushrooms, and zucchini. Do not put cheese on yet!!

Bake pizza at 500 degrees for 5 mins. Rotate pizza and bake at same temp for additional 5 min. Remove pizza from oven and top with your cheese. Continue to bake pizza at 500 degrees for about 3-4 mins. Your crust should be browning but not burning! Remove pizza from oven and cool. If you cut into your typical pizza slices, you should have 8 slices. We like to cut ours into small squares.

Great pizza... and not bad on the calories and/or fat. My son even loves it! Hope you enjoy ~
