spinach, egg, tomato, cilantro, feta or goat cheese, salsa, (w.wheat wraps) olive oil, salsa

Ingredients

    6 oz. of egg substitute
    1/2 of roma tomato, diced
    1/4 chopped cilantro or to taste (can use parsley instead) or dried
    2 tsp of feta or goat cheese (light)
    1 tsp of olive oil
    2 whole-wheat wraps
    2 tbsp of salsa
    1/2 avocado- chopped
    1/2 C of baby spinach

Directions

Coat pan /w/oil, & heat. Scramble egg, stir in tomato & cilantro or parsley, warm wraps in micro.
Remove from heat & divide egg, cheese &
spinach in each wrap. Roll up & close ends.
Serve /W/salsa & avocado (if using)
Serves 2
