Ingredients

600g Ground chicken
Small bunch parsley chopped
1 Tbsp olive oil
2 large onions
2 garlic cloves crushed
450g carrots peeled, cut into chunks
450g potatoes, cut into chunks
1 tbsp sweet paprika
500g can (sieved tomatoes)
300ml water
Directions
1. Mix the chicken with half the choppe parsley, add salt and pepper to taste, then shape into 12 balls. Heat the oil in a large, non stick pan and fry the meatballs for 4 - 5 minutes shaking the pan occasionally until the meat is browned all over
2. Add teh chopped onions, garlic, carrots, potatoes and 300ml water to the pan and bring to the boil, cover and simmer for 15 minutes
3. Sir in the paprika, tomatoes and half the remaining parsley. Bring to the boil, cover and cook for a further 10-15 minutes or unti the potatoes and carrots are tender. Season to taste and sprinkle with the remaining parsley to serve.
