    2 1/4 cups flour
    1/2 tsp baking powder
    3/4 tsp baking soda
    1/2 tsp salt
    3/4 cup sugar (organic is better)
    1 tsp vanilla
    1 cup mashed bananas
    1/3 cup All Whites Egg Whites
    1/4 cup Stoney Field Fat Free Plain Yogurt
    1/2 cup unsweetened applesauce


Mix/sift together dry ingredients.

Mix applesauce with sugar, then mix in egg whites.

Lightly mash bananas; add vanilla and yogurt.

Combine the wet ingredients; mix in the dry ingredients until well blended.

Pour into lightly greased silicon muffin cups (if available) - fill 3/4 full.

Bake at 350 degrees for 20 - 25 minutes.

Makes 18 cupcakes.

  • Pretty good! I didn't have any yogurt, so I just used 3/4 c applesauce instead. A bit heavy, but delicious! I used a cinnamon buttercream and it was amazing. - 6/6/11
