Introduction

For me this is an easy breakfast that I can take with me as I run out the door. Good way to get in some healthy carbs, veggies, and protein without a second thought. I sometimes sprinkle some low or no fat cheese over the egg mixture for something extra. For me this is an easy breakfast that I can take with me as I run out the door. Ingredients

    1/2 cup of Papetti All Whites
    2 handfuls fresh spinach (about 2 cups)
    1/4 cup sliced mushrooms
    1 Whole Grain Pita Pocket
    Pam Butter Spray
    Onion Powder, Garlic Powder, and Pepper (to taste)

Directions

Slice mushrooms and saute them with spinach and seasonings with Pam. Once the spinach has wilted, add egg whites stirring to avoid burning or sticking. While egg cooks, toast pita on low setting.

Once egg are done, pita should be ready to stuff.

Serving size: 1 breakfast pita
