Introduction

Ingredients

    1 tsp. canola oil
    5 boneless, skinless chicken thighs OR
    2 boneless, skinless breasts
    1 medium onion, chopped
    3 stalks of celery, sliced
    1 cup carrots, chopped
    4 cloves of garlic, minced
    6 cups low sodium, fat free chicken broth
    2 cups water
    1 cup orzo pasta
    1 Tbsp. cumin
    2 tsp. salt
    1 tsp. black pepper
    1/2- 1 tsp. red pepper flakes

Directions

In a big pot, cook chicken in oil until done. Remove from pot to cool slightly. Meanwhile, cook veggies in the drippings until tender. Add broth and water. Dice up the cooked chicken and return to pot. Add spices and orzo pasta. Bring to boil. Continue boiling until pasta is done, about 7 minutes. Let cool slightly & serve. Makes 6 2-cup servings.
