Introduction

Yummy, tangy stirfry that is low cal and low carb. Fast and Easy!! Yummy, tangy stirfry that is low cal and low carb. Fast and Easy!!
Number of Servings: 3

Ingredients

    1 boneless skinless chicken breast
    1 lemon
    1 lime
    salt
    pepper
    Half a medium zucchini sliced
    1 carrot sliced
    5 oz. frozen broccoli
    1/3 stick of butter
    Olive oil

Directions

Heat electric skillet to medium-medium high. Add a few splashes of olive oil to the pan. While your waiting for it to heat up, cut your lemon and lime in half. Salt and pepper your chicken and then squeeze the juice of half tthe lemon and half the lime over the chicken. Throw it in the skillet cook until both sides are well seared. While you are waiting for it to cook. Take the other halves of the lemon and lime and squeeze the juice over your veggies and salt and pepper them. Take the chicken out of the skillet and cut into strips or chunks. Throw back in the skillet with the veggies and the butter and saute until the veggies are cooked to your liking and your chicken in fully cooked.

    O.K.
    Would have liked a bit more flavour... Also, I found the chicken dried out a bit while the veggies were cooking in the pan. Might be worth blanching the veggies while the chicken is cooking ao they're good to go when you add them to the pan. Would be a good one if you were in a hurry though. - 2/8/09
