Introduction

This is a modified verion of Katie Brown, LifeStyle Expert and TV host and Kraft foods. My husband LOVED this one, wants it for Thanksgiving dinner. This is a modified verion of Katie Brown, LifeStyle Expert and TV host and Kraft foods. My husband LOVED this one, wants it for Thanksgiving dinner.

Ingredients

    1 graham cracker crust (can be low fat)
    1/2 cup pecans, roughly chopped
    4 Tablespoons Sugar Free Carmel Ice Cream topping
    1 cup Skim milk
    2 packages vanilla instant pudding
    1 cup pumpkin (I used canned)
    1 1/2 teaspoon pumpkin pie spice
    1 tub (8oz) Cool Whip FREE

Directions

Place all but 2 T of nuts in pie crust. Beat together pudding, milk, spices and pumpkin until well blended. Fold in 1 1/2 cups Cool Whip (reserve the rest for the top of the pie). Drizzle about 2 TBL of the Carmel topping on nuts in crust. Pour pudding mixture on top of the crust, smooth out and chill. Cover with remaining Cool Whip, chopped nuts and drizzle remaing 2 Tablespoons of Carmel on top. Chill and serve. Very yummy!

    I made this yesterday for Thanksgiving and it was a HIT! My 13 year old son; who hates pumpkin, even had a slice. I will definately make again for Christmas dinner. - 11/28/08
