Introduction

Mojo is a garlic based sauce similar to piccata sauce. The same recipe makes the sauce (served with the meat) and, with addition of more orange juice, the marinade for the meat before cooking. Ingredients

    20 cloves garlic
    4 limes
    4 oranges
    1 cup olive oil
    6 tbsp. leaf oregano
    1/4 tsp. ground cumin
    1/2 tsp. sea salt
    1/4 tsp. pepper

Directions

Juice limes and oranges. Peel garlic.
Add all ingredients to food processor, reserving 1 cup of the orange juice.
Process.
Remove and reserve 2/3 cup of the mixture: this is the mojo sauce (served on the side with the meat).
Add remaining orange juice to food processor and pulse to mix. This is the marinade.

Marinate meat at least two hours: longer is better. Grill, broil or bake as desired. Serve with the mojo sauce.
