Introduction

Delightful Apple cake for any occasion, brunch, bbq, party, not to sweet but yet sweet enough to cure to "I want something sweet" craving. Substitutions can be made to in the recipe with eggs, nuts, etc... Number of Servings: 24

Ingredients

    3 cups flour
    2 cups sugar
    1 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon cinnamon

    1 cup cooking oil (canola, vegetable)
    3 well beaten eggs (2 will work but the cake will not be as moist but still very good)
    2 teaspoons vanilla
    1 cup chopped nuts (pecan is my favorite)
    3 cups raw apples (Granny Smith is what I use)

Directions

Preheat oven to 350 degrees:

Do not use a mixer:

Mix flour, sugar, baking soda, salt, cinnamon in a large bowl.

Mix cooking oil, eggs, vanilla, nuts, raw apples.

Combine wet ingredients with dry ingredients and mix with spoon/spatuala.

Press into a well greased pan 13 X 9 X 2 will work or a foil pan to go for parties.

Bake for 40 to 50 minutes - when toothpick comes out clean.

Served 20 to 24 for pieces 2" to 1 1/2"

    The longer it sets the moister it gets!! I got the recipe from my ex mother n law but i revised it cutting down on the oil and used splenda, original recipe called for 3 cups of oil. Will have to try the white, wheat and wheat germ mixture next time... - 1/27/09

    I used 1 cup white flour, 1 cup wheat flour, and 1 cup wheat germ (I use this blend for most of my baking) and used Splenda 1 cup instead of sugar...it was wonderful and soo moist! - 1/17/09

    I made the recipe, it turned out very good, I used the pecans, and yes I chopped the apples, it is delightful, very, very, tasty, got to try it. - 12/18/08
