Ingredients

3 large eggs
6 egg whites
2 jalapeno peppers minced
1 small onion minced
2 tomatoes diced
1/2 cup shredded reduced fat cheese
1/3 cup cilantro
1 1/2 cup fat free refried beans
pico de gallo or salsa of your choice
6 multi grain tortilla ( I use south beach )
Directions
preheat oven 450 degrees
immerse quickly and dry tortilla then spray with cooking spray and bake in oven 2-3 minutes or until light and crispy
heat saute pan and saute onion for 2 minutes add jalapeno peppers and continue cooking 2-3 minutes add tomatoes and cook until all soft beat eggs and egg whites together until fluffy add to pan and cook until soft set remove from heat
take tortillas spread with 1/4 cup beans on each divide egg mixture between the 6 tortilla's divide cheese and bake til cheese melts around 1 minute
remove from oven top each with cilantro and pico de gallo or salsa
