Introduction

This is too high in fat but oooh so yummy. It is VERY possible to reduce the calories...I had the extra calories to spend that day and decided to splurge with real butter. I had leftover broccoli cauliflower medley, you could blanche fresh or use frozen. This is too high in fat but oooh so yummy. Ingredients

    linguini, cooked (pasta), 454 grams (1 lb box)
    Butter, salted, 2 stick
    Garlic, 6 cloves minced
    Onions, raw, 1 medium (2-1/2" dia) chopped
    Broccoli, cooked, 2 cup, chopped
    Cauliflower, cooked, 1.5 cup (1" pieces) Mushrooms, canned, 227 grams (2 4oz cans, drained)
    Shrimp, cooked, 32 oz

Directions

Bring large pot of water to boil (for long pasta).
When almost boiling, start melting butter in deep skillet or shallow pot.
Add garlic and onions, stir often, cook 3-5 minutes till onions clear.
Add mushrooms, broccoli and cauliflower. Stir
Add linguini to water. cook 3-5 minutes
Add shrimp to butter/vegetable sauce.
When shrimp is pink through, but not too done, turn off pan, remove from heat.
Drain pasta. Mix pasta with sauce, toss together. Serve. Made 10 1-1/2 cup servings
We topped ours with some parmesan cheese, not included in calories.
