Ingredients

    2 bunches broccoli
    1/2 cup extra lean diced ham
    4 cups (large can) chicken broth 99% fat free
    1/2 large onion diced
    2 medium potatoes diced
    1/2 cup sliced carrots (canned)
    1 1/2 cups (large can) cream of chicken soup 99% fat free
    1/2 cup skim milk
    1/4 cup flour
    1/4 tsp Mrs. Dash
    1/4 tsp ground pepper
    1/4 tsp garlic powder
    3 bay leaves


Directions

In large pot boil broccoli, potatoes, and onion in 2 quarts water for 20 mins. Meanwhile, in a large pot whisk together chicken broth and cream of chicken soup. Add all spices and ham to this mixture. Strain the vegetables and add to the mixture. Bring to a slow boil. In a small bowl whisk milk and flour together until smooth and stir into the slowly boiling soup. Simmer for 10-15 mins. Makes approximately 8 1-cup servings.

  • I boiled my veggies in the chicken broth so as to not loose that flavor or the nutrients by straining. GREAT soup for this cold night! - 12/10/08
