Ingredients

    1 - 28 oz. can diced tomatoes, juice included
    1 C. vegetable broth
    1/2 C. red wine
    1 1/2 C. baby carrots
    1 C. frozen pearl onions
    8 oz. sliced fresh mushrooms
    2 large stalks celery, sliced
    3 cloves garlic, pressed
    1 tsp. dried thyme
    1/2 tsp. salt
    1/2 tsp. black pepper
    1 1/2 lbs. lean pork, diced into 1/2" - 1" cubes
    2 Tblsp. cornstarch
    2 Tblsp. water

Directions

Put all ingredients, except the pork, cornstarch and water, into a slow cooker. Stir to combine and turn on high. Preheat a large skillet coated with nonstick cooking spray over medium heat. Cook the pork until browned on all sides, but not cooked through. Add to the ingredients already in the slow cooker and stir to combine. Cook for 5 to 6 hours on high. Combine the cornstarch and water in a small bowl and add to the slow cooker. Stir to combine and cook for another 20 to 30 minutes.

    Other then cooking the pork this recipe was very quick and easy. Very tasty - the only thing I would change is maybe a few more seasonings. - 1/18/09
