Ingredients

    2 t olive oil
    1 lb chicken thigh, skin and bone removed
    3/4 cup chopped onion
    1/4 t salt
    1/4 t pepper
    1 15 oz can tomatoes with chipolte
    1 15 oz can black beans rinsed and drained


Directions

Heat olive oil in large skillet. De bone and skin chicken thighs (breast can be used). Add chicken and onion to pan. Cook until chicken is done. Add the rest of ingredients. Warm through. Serve over rice.
