Introduction

This is only for Lap-Banders whose restriction will allow them to eat the very small amounts of coconut and nuts that are in the granola cereal. The coconut and nuts do soften during the cooking process and, if well chewed, should be tolerated by most.

I used the caramel sauce with this because it is what I had on hand but I think that the DaVinci Sugar Free and Fat Free Chocolate Sauce would be delicious, too. The nutrition information would remain the same.

Ingredients

    I small Bartlett Pear (approx 3 per lb)
    1 Tablespoon DAVINCI® Caramel Syrup, Sugar Free and Fat Free
    1/4 cup YODER'S Light Ricotta Cheese
    1/2 ounce KASHI® Cocoa Beach, granola cereal


Directions

1. Peel pear, slice in half. Remove core with a melon baller. Remove blossom end and stem. Cut out stringy part between the stem and the core. Cut into bite-sized chunks.
2. Put pear in an 8 ounce Pyrex bowl, ceramic ramekin or other microwaveable dish that has been lightly sprayed with Butter Flavored cooking spray. Cover with waxed paper and microwave on high for 2 minutes. Let sit in microwave for 2-5 minutes.
3. Remove pear from microwave and top with caramel, ricotta cheese and cereal.
4. Cover and return to microwave for 1 minute more. Stir and enjoy while warm.
