Introduction

I love Great Northern beans, so occasionally I'll open up a can, throw in some ham and eat it just like that. This time I added a few more ingredients to make it even better. I love Great Northern beans, so occasionally I'll open up a can, throw in some ham and eat it just like that. This time I added a few more ingredients to make it even better.
Number of Servings: 4

Ingredients

    2 cans Great Northern beans, undrained
    1 cup extra lean ham, cubed
    3 cups baby spinach
    8 fresh mushrooms, sliced

Directions

1. Steam spinach in microwave until completely wilted. Separate and shred with fork.
2. Add beans to a large pot, including juices.
3. Add diced ham, spinach, and sliced mushrooms.
4. Cook on medium-high heat until hot and bubbly. I eat it when the mushrooms are partly but not completely cooked.
5. I think it tastes great just like this so I don't add any spices. Serve with a thick slice of homemade whole wheat bread, or cornbread (not included in nutritional info). Calculated on 4 servings.

    sounds really good , high in fiber and iron but way too much sodium. Probably could make it with dried beans, veg. broth, lowsalt ham, etc. LOL probably wouldnt taste as good but I am willing to try. - 12/7/08
