Introduction

Adapted old recipe to reduce sodium. May substitute Low Sodium tomato Juice.
Serving = about 2 Tablespoons.
Make sure you buy vinegar products with no added sugar or corn sweetener. If you need a sweeter taste, use spenda.
South beach friendly salad dressing -- may need 4 tablespoons on your 4 cup raw salad.

If you need lower fat dressing, reduce or eliminate the oil.

Ingredients

    1/2 cup of Low Sodium V8
    1/4 cup Olive Oil
    1/4 cup Lemon Juice
    1/4 cup Red Wine Vinegar [may substitute]
    1+1/2 teaspoon of Black Pepper or a peppery Mrs. Dash product
    1 clove of garlic minced, or equivalent of freeze dried garlic
    2 Tablespoons of Sundried Tomatoes, minced
    2 Tablespoons of Fresh Basil chopped or 1 tsp of dried basil
    Optional: add Splenda only if needed.

Directions

Mix ingredients in a medium jar with tight fitting lid. If you store in the refrigerator, the Olive oil will solidify. Remove from refrigerator about an hour before the meal & shake until well mixed.
