Ingredients

    1 Can Black Beans
    1 Pound of Ground Chicken
    1 Can Diced Tomatoes
    2 Cups of Brown Rice
    2 oz of Wild Rice
    1 Tbsp of Diced Jalapenos
    1/2 Cup Diced Red Peppers
    1/2 Cup of Mexican Shredded Cheese.
    Cheyane Pepper, Black Pepper, Garlic Powder, Red Pepper seeds

Directions

Start cooking brown and wild rice as directed. When rice is half way done, cook ground chicken in skillet and add diced jalpenos. Turn heat down to simmer. Rinse and drain well 1 can of black beans, add to chicken. Then add one can of diced tomatoes, add spices to taste. Pour rice in a 13x9 pan, and sprinkle diced fresh red peppers on top. Pour chicken mixture over rice and sprinkle on the cheese to cover evenly. Put in preheated 350 oven for 20 minutes or until cheese is melted. Depending on your serving size make about 14 - 16 servings. (16 is 1 cup)
