Introduction

This is a sweet and sour dressing I like best on my salads with some grilled chicken or strawberries and mandarin slices on top.
If you like your dressing more sour than sweet, omit the Splenda and add more lemon juice. If you prefer sweeter, add another pinch of Splenda.

Ingredients

    Juice and zest of 1 lemon
    1 tsp. honey mustard (or dijon mustard)
    1 tbsp. red wine vinegar
    1 tbsp. olive oil
    1 pinch of splenda (or sugar)
    salt and pepper to taste

Directions

Whisk all ingredients together in a small bowl. Pour over salad and toss.

This recipe makes about 4 tbsp of dressing. Use for 1 large (4 to 5 cups) salad.

*Almost all the calories come from the olive oil. If you can use less, by all means do so.* : )
