    1 bag of frozen fajita vegetables (bell pepper and onion mix)
    2 jars of sweet and sour sauce
    1 can of chunk pineapple (drained)
    2 cans of sliced waterchestnuts (drained)
    8 boneless, skinless chicken breasts
    cooked white rice


Serves 8

Cook the chicken breasts in a method you prefer (I like to bake them in the oven).

Spray a large skillet with PAM. Pour the frozen fajita vegetables into the pan and saute until tender and the onions are translucent.

Add the pineapple, waterchestnuts, and sweet and sour sauce to the skillet. Heat on low to medium-low until the chicken is thoroughly cooked.

Let the chicken rest for 10-15 minutes before cutting into large chunks. Add the chicken to the skillet and simmer on low for another 5-10 minutes.

Pour 2 cups of the sweet and sour chicken mixture over a cup of rice.
