Number of Servings: 8

Ingredients

    4 T. Canola oil
    1 onion, chopped
    2 cloves garlic, minced
    1 can black beans, drained
    1 green pepper, chopped
    1/2 of 10oz. bag frozen corn
    8 in. flour tortillas (8 each)
    1 c. shredded cheddar cheese

Directions

In large skillet, saute 1 T. oil, onions and garlic until soft. Mix in beans, bell peppers, tomatoes and corn. Cook until heated through. Place a tortilla on a plate, sprinkle with some cheese over the tortilla. Spoon some of the bean mixture over the cheese. Top with another tortilla. Repeat until all are used. Heat oil in a large skillet over med. high heat. Place quesedillas in the skillet and heat and flip until both sides are browned.
