Ingredients

    2 cups spinach
    purple onion, a few thin slices, coarsely chopped
    3 to 4 T. chopped cilantro
    1/2 mango, peeled and chopped in bite size pieces
    3 oz salmon
    2 T Newman's Lowfat Sesame Ginger Dressing

Directions

prepare salmon by grilling on top of stove for 2 1/2 minutes on each side. Do not over cook...only until done, when inside of fillet is no longer dark pink. While salmon is cooking, peel, slice and then chop mango. Lightly chop spinach and mix together with onion and cilantro. Toss in mango, top with salmon fillet and Newman's Lowfat Sesame Ginger Dressing. Enjoy!

    Sounds really good. You can also find Mango in a can that is already cut and pealed that still tastes fairly good. - 12/13/08

    wow! what a rich recipe. I love salmon but I couldn't eat it with mango. Salmon is very expensive to buy here in the UK so I can't afford to experiment with recipes I'm not sure about. For the same reason I would never grill salmon in my George Foreman, which dries chicken to a leathery mass. yuk! - 4/16/10

    I love salmon, and this sounds awesome. I would have to probably do it without the mango though. I don't know how to peel and chop one! I can't ever get it to come off that darn seed! - 12/11/08
