Introduction
Savory chicken breasts, pounded flat, stuffed with mushrooms, garlic & onions that have been simmered in white wine and then all wrapped up in turkey-bacon. Ingredients

2 chicken breasts (3 oz/each)
4 slices of turkey bacon
1 TBSP Olive Oil
1 cup white wine
2 cups mushrooms, sliced (your choice of variety)
1 cup onions, chopped (I use yellow onions)
3 cloves of garlic, minced
Salt & Pepper

Directions
Preheat oven to 350
In a saute pan over med-high heat, add 1 tbsp of olive oil (this can be ommitted if desired, but adds great flavor!). Add the onions, and let them cook for a couple of minutes, stirring occasionally. Add garlic and muchrooms, and then pour the white wine over the mixture. Cover and let simmer until liquid has been completely absorbed.
While the mushrooms, onions & garlic are cooking, pound the chicken breasts until flat. (Depending on the size of chicken breast, you may be able to use one breast and cut it in half)Place 2 slices of the turkey bacon on a flat surface side by side, and then place the flattened chicken breast on top of the bacon. Season the breast with salt & pepper.
Once the mushroom mixture is done, scoop half onto the inside of each chicken breast, and then slowly roll the breast and turkey up into a roll. Secure with toothpicks. Place them in a baking dish, and then place in over.
Cooking time will vary depending on the size and thickness of the chicken breast, but check after 25 minutes (typically takes 30-40 minutes total). Makes 2 servings (serving=1 chicken breast bacon-wrapped roll).
