Ingredients

    2 large eggs
    1/2 cup of black beans(kidney beans are a good substitute as well)
    1/2 cup chopped onions(optional)
    1/2 cup of striped peppers(green, red or yellow, up to you!)
    1 tsp cumin
    1 tsp chili powder
    Sour cream or salsa, optional

Directions

First prepare all your veggies, chop and slice. Prepare the beans first, as eggs don't take too long to cook. If the beans are canned, measure out a half-cup and put on stove in small pot on LOW heat, DO NOT drain! Let it shimmer, stir to make sure it does not burn. When heated, pour in onions and peppers. Sprinkle in both cumin and chili powder(use less or more than a tsp depending on your heat preference) Stir until you notice the veggies are nice and soft. While you wait for the vegetables to soften and retain flavor, you might want to start your eggs. Get a small pan, and spray with nonstick cooking spray. Break both eggs and scramble yoke and white. Let it cook on low heat so its like an egg pancake. Now back to the beans. Mash them slightly to make a pastier consistency. Take the mixture and dabble it over one half of the egg, spreading to make even. Fold egg over beans to make a nice omelete. Optional is either sour cream or salsa, both are nice toppings.
