Introduction

A family recipe that I tweaked a bit. My mother made this with turkey ham instead of turkey breast, but the sodium content when made with turkey ham is much too high. The "stew" is really more along the lines of a soup consistency, but you can thicken the broth with cornstarch if you desire a thicker "stew". Enjoy! A family recipe that I tweaked a bit. Ingredients

6 cups (48 ounces) cubed turkey breast
6 cups fresh snap green beans, ends removed and cut in thirds
4 cups chopped green cabbage, stems removed
    2 cups onion, chopped
3 cups diced potatoes, skin on
    6 cups vegetable broth
    2 cloves garlic, diced
    10 small sprigs fresh parsley
    1 large bay leaf
    1 tbsp black pepper

Directions

Pour broth into slow-cooker. Add black pepper, garlic, parsley, and bay leaf. Add turkey to broth in slow cooker first, then add remaining ingredients. Cover and cook on high setting for 6 hours. Remove bay leaf and serve. Note: It may not look like there is enough broth in the "stew" at first, but condensation that occurs during cooking will make more broth.
**At the end of the cooking cycle, you may thicken the "stew" if desired by taking a cup or so of the broth and adding a few tablespoons of cornstarch, mixing well, and then re-adding it to the slow cooker and stirring to incorporate.**

Makes about 12 one cup servings
