Introduction

Low fat, low calorie, yet very satisfying! Low fat, low calorie, yet very satisfying!
Number of Servings: 6

Ingredients

    6 medium size red potatoes, cubed
    2 cans Swanson chicken broth 99% fat free, no MSG.
    1 can water
    1-1/2 cups chopped onion
    3 ribs celery, chopped
    1 cup 2% milk
    2 tablespoons dried parsley
    1 teaspoon minced garlic
    Salt and Pepper to taste ( I usually don't add salt)

Directions

In a soup pan, bring chicken broth and water to boil, put in potatoes, onion, and celery. Cook until potatoes are tender. With a slotted spoon get out about 1 to 1-1/2 potato's worth of cubes and mash on a dish and place it back in the pot to thicken the soup. Add milk, parsley, garlic, and pepper.

Makes 6 servings.

    I love this, very filling. I used watson brand chicken soup and gravy bullion instead of broth. I added carrots and lots of pepper, too. - 2/3/09
