Introduction
I try to get smallish, oval shaped sweet potatoes for this savory side dish. It makes a nice healthy lunch, too. I try to get smallish, oval shaped sweet potatoes for this savory side dish. It makes a nice healthy lunch, too.Number of Servings: 6
Ingredients

3 sweet potatoes, about 4" each
1/2 cup fat free cottage cheese
1/2 cup grated asiago or similar strong cheese
1/3 cup broth
1 tsp sage
salt and pepper to taste
Directions
Wash and pierce potatoes. Microwave on high for 12-14 minutes, turning twice. Meanwhile use a hand blender (or whisk if you must) to make the cottage cheese smooth and creamy. Once cool enough to handle, cut potatoes lengthwise and scoop out most of the flesh. Mix this with the rest of the ingredients and add back into the skins. Sprinkle a smidge of grated cheese on top of each one and put under the broiler for 1 minute.
