Ingredients

    one large egg
    1/4 cup frozen potatoes o'brien
    diced tomatoes
    diced onions
    splash milk
    shredded cheese

Directions

scramble egg with milk
add potatoes, tomatoes and onions.
Pour into a muffin tin prepared with Pam or other cooking spray.
sprinkle cheese over the top
bake for 12 minutes
