A light lunch or dinner entree salad that is easy to throw together, looks absolutely lovely and tastes so Mediterranean. What a wonderful alternative to the heavier mayo or creamy tuna salads of old!

Number of Servings: 1

Ingredients

    1 C fresh spinach, torn (or dark salad greens)
    2 Tbs sliced scallions (or onion)
    1/4 C finely diced bell pepper (I use red or yellow for eye appeal)
    3-4 pitted Kalamata, black or green olives, roughly chopped
    Yield of 5 oz canned tuna once well drained
    1 Tbs Balsamic, cider, wine or malt vinegar
    1/2 Tbs light olive oil
    Tuscan Blend Seasoning to taste
    S&P to taste

Directions

Create a bed of spinach on serving plate or bowl.
Mix together tuna, olives, scallions and peppers; mound on bed of spinach.
Sprinkle with seasonings and finish with drizzle of vinegar and olive oil.

Looks so lovely why not serve with a nice chilled Pinot Grigio. Yumm!
