Introduction

Ingredients

1 24oz pkg Frozen Spinach Stuffed Rigatoni
1/5 onion roughly chopped
1-2 cloves garlic chopped
2 slices cooked bacon crumbled
1 28 oz can crushed tomatoes, low sodium
2 Tbs tomato paste
1 Tbs dried tarragon (2 Tbs if fresh)
Directions
Bring 3 qts salted water to full boil; add and cook frozen rigatoni 2 mins.
In med sauce pan sweat onions with garlic and chopped/crumbled bacon.
Add tomato paste, crushed tomatoes and tarragon; simmer while preparing rigatoni.
Spray medium casserole dish. Add 1/2 prepared sauce then drained rigatoni and finish off with remaining sauce. (If rigatoni comes with seasoned grated parmesan, sprinkle on top).
Bake in 400 deg oven, uncovered approx 20 mins or until bubbly.
Cool slightly before serving.
Serves 6 (approx 6 rigatoni plus sauce).
