Introduction

Ingredients

    1 cup Yellow Corn Meal
    1 cup flour
    1/4 cup sugar
    1 Tbsp Baking Powder
    1 tsp salt
    1 cup nonfat milk
    1/3 cup canola oil
    1 large egg

Directions

Preheat oven to 400 degrees. Grease 8 x 8 pan. Combine dry ingredients. Combine milk, oil and egg in a separate bowl. Add egg mixture to dry ingredients and stir to blend. Pour into pan and bake for 20-25 minutes.

    Incredible!
    This is an favorite: love it cuz it's easy, uses oil instead of shortening or butter, and very low sugar. Nice crumbly texture, not cake-like. If eaten soon after baking, it's quite moist and I don't need butter. Hard to eat just 1/12th however. Making muffins might help with my portion control - 1/26/10
