Introduction

These are AMAZING! Fluffy and full of flavour from the bananas. And my non-vegan husband LOVES them too. These are AMAZING! Fluffy and full of flavour from the bananas. And my non-vegan husband LOVES them too.
Number of Servings: 7

Ingredients

    1.5 cups whole wheat flour
    1.5 tsp baking powder
    .5 tsp baking soda
    .25 tsp salt
    .5 tsp cinnamon
    1 tbsp Earth Balance Buttery Spread (or other vegan butter)
    1.5 c soy milk (I use Silk)
    1 tbsp vinegar
    1 tsp vanilla extract
    2.5 tbsp vegan chocolate chips


Directions

Mix all the dry ingredients together.
Melt the 'butter' and mash it in with the bananas and vanilla. Make sure the bananas are mashed well.
Mix the vinegar and soy milk and let stand for 5 minutes.
Combine all ingredients and mix well. Add the chocolate chips. Stir well.
Cook over medium-low heat.
Makes 7 good-sized pancakes!

    you dont say how many bananas to use...? - 5/20/09

    I forgot to mention - it's up to you. My hubby and I like 2, but when my stepson has them, he only likes 1 added. It's really dependent on how "banana" like you want them :)

    These smelled so good while cooking them, and taste fresh with good banana flavor, even though I left out the chocolate, still awesome! - 5/16/09
