Introduction

I re-worked my favorite high-fat, high-calorie, little-nutrition Banana Nut Bread recipe, and came up with a winner! I re-worked my favorite high-fat, high-calorie, little-nutrition Banana Nut Bread recipe, and came up with a winner!
Number of Servings: 16

Ingredients

    1/2 Cup - Sugar
    1/2 Cup - Sugar free applesauce (I made my own by cooking 2 peeled and cored apples down and mashing them)
    4 - Egg whites
    1-1/2 Cup - VERY ripe bananas mashed (about 3 to 4)
    2 Tbsp - Buttermilk Blend Powder (SACO brand in the baking stuff aisle)
    1/2 Cup - Water
    1 tsp - Vanilla extract
    1 tsp - Baking soda
    1 tsp - Salt
    1 Cup - All-purpose flour
    1-1/2 Cup - Whole wheat flour
    1/2 Cup - Chopped walnuts

Directions

Preheat oven to 250. Whip all but flours in large bowl until well-mixed. Add flours 1/3 at a time and mix well. Add nuts and stir. Pour into 2 loaf pans that have been sprayed with Pam. Bake in 350 oven for about 1 hour and 15 minutes, or until knife inserted in center comes out clean.

    Made using %100 sugar substitute, sprinkle of cinnamon did not have butter milk powder used 2 tsp skim milk.... looks great, tastes good. - 5/2/12

    Made using 1/2 C Sugar subsitute,1Tbs cinnamon, 1 C. self rising flour, didn't have buttermilk blend,,, we'll see? - 1/3/11

    Very Good
    I made this with whole white wheat flour, whole wheat flour, sprinkle of cinnamon, 2 whole eggs, & 2 egg whites. A tiny bit dry but very good flavor, still tasted sweet, and no oils or fats used (besides the egg). I'm impressed! Thank you! :) I will make this again! - 12/30/10
