Introduction

This is a great and fun recipe for young ones to help with. Just be careful, it is easy to eat more then you planned. This is a great and fun recipe for young ones to help with. Just be careful, it is easy to eat more then you planned.

Ingredients

    1 (8 oz.) package cream cheese
    2 eggs
    1/2 cup sugar
    1 tsp. vanilla
    20 Vanilla Waffers (broken up to crumbs)

Directions

Preheat the oven to 350 degrees. Place all vanilla waffers into a bag and break up. The finer the crumps, the better.

Mix all the ingredients (except vanilla waffers) until smooth.

Line the mini muffin pan w/ foil liners and place a small amount of cookie crumbs at the bottom. (just enough to cover the inside bottom of the tin.

Fill the mini cupcake tins to just below the top line.

Bake at 350 degrees for 20-25 minutes (until set).

    Very Good
    They were good. I used Dominos Light Sugar, reduced-fat vanilla wafers, and Cabot Neufchatel cheese, which has 1/3 less fat than cream cheese. The calorie count came to 47 calories each w/o cherries on top. Bet you can't eat just one !! - 3/26/13
