Ingredients

    1 pound lean ground turkey
    2 Tbsp extra virgin olive oil
    1/2 cup fresh onion, chopped
    1/2 cup fresh red pepper, chopped
    2 cloves fresh garlic, minced
    1cup frozen chopped broccoli
    1 cup 2% milk cheese, shredded
    1/2 cup 2% milk
    10 oz whole wheat, uncooked rotini pasta
    1 tsp freshly ground black pepper
    salt, to taste

Directions

Heat olive oil in large skillet on med-high. Add turkey, brown until slightly pink in the center. Add garlic, onions, red pepper, until turkey is no longer pink, and veggies are slightly translucent. Add uncooked pasta, frozen broccoli, and milk to the turkey mixture. Add just enough water to submerge the pasta. Bring to a boil. Reduce heat, and cover. Simmer for ten minutes, or until pasta is al dente. Add salt pepper, and cheese. Stir Until cheese is melted.

*Makes about 6, 1-cup servings
